This unit has inspired a friend and I to start our own garden and it's something I wish I had done earlier. Just yesterday we were able to harvest our first item, cilantro, from the garden and it was really exciting. This garden is allowing us to be more engaged and informed in our food consumption. While I admit it was expensive to start, (we put about $70 into it) I think our harvests will be worth more than that. We planted many different varieties of tomatoes and peppers, cucumbers, zucchini, squash, melons, eggplant, and pumpkin. Being responsible for your own food and starting a garden is a fun experience that I wish I had done sooner.

Rewind
If I could go back 4 years, I don't think i would change what I eat. I like all types of food. I would, however, change how I eat. I would focus on eating healthy a majority of the time and not eating out too much. I would still eat the junk food I like because I like the way it tastes, but I would consume them in moderation. This way I would not have as many toxic chemicals in my body at any one time. Sometimes eating fast food is easier than cooking especially if one is in a hurry or has to eat of the go. Also, it is an inexpensive way to eat, but I think that will change soon. The minimum wage will increase to $15 per hour which I think will cause fast food prices to increase. So possibly eating healthy could become cheaper than eating out.

I relate to what you said about wishing to have eaten food in moderation. However it's not too late to start being healthy! I've been interested in starting my own garden also, it seems fun to cook with good, healthy home grown food. In addition, knowing there aren't all these pesticides and steroids used to grow them must also be a bonus!
